So, as usual, the weekend ALWAYS flies by. Sunday is C-day: Church, Cooking, Cleaning, and Clothes-That-Need-A-Wash Day. We tidy up the house and prep for our week, which includes some yummy cooking. What’s your weekly dinner routine for healthy meals? Do you cook EVERY night or do you plan out your meals?
We don’t cook every night. Instead, I cook 80-90% of our meals on Sunday and we eat it for the rest of the week (until Thurs night). It’s efficient for us and helps us stay on track with eating healthy. Otherwise, we can easily compromise healthy choices for “convenient” choices, especially when you’re borderline HANGRY. Know what I mean? This is a recipe I have made time and time again – My Famous Turkey Meatballs – and you won’t believe how easy it is.
2 lbs. of lean ground turkey
1 1/2 cups quick cooking oats
1 bell pepper (finely chopped)
1 small onion (finely chopped)
3 egg whites
2 tsp black pepper
3 tsp salt
2 tsp dry yellow mustard
2 cloves garlic (finely minced)
1/2 tsp cumin
1/2 tsp thyme
- Preheat oven to 375 degrees.
- Spray muffin pan with canola or olive oil. Use the one that makes 12 muffins. They will come out in perfect portion sizes. Wipe off any excess oil around the rim so it won’t burn.
- Mix all your ingredients together in one large bowl like this.
- Roll the mixture into balls and place in muffin pan. Muffins will be a good size. Don’t worry about neatness. As you can see, mine look like blobs.
- Bake for 40 minutes.
I have eaten these alone, as sandwiches, with a bit of sauce (i.e. ketchup, bbq sauce, etc), and even as a dinner entree with some complex carbs and steamed veggies. Here’s to healthy eating. Enjoy!
