Hey there RAWRs! How was your weekend? Did anyone partake in National Margarita Day on Saturday? We did! I had such an amazing time and as always, I wish the weekends were a day longer…
Here’s a recap of what I did:
- My friend and I met up for a super early run. We did an incredible job – 6 MILES! Yay! I posted a victory picture of us on my Instagram HERE. (@misslvn) So proud of us for pushing each other and finishing strong. I am so ready for the race this weekend. ๐
- Took Marli to her very first car wash – Yay! Too bad she HATED it and cried…a lot.
- My sweet girl has been teething again and I can see her 2 top teeth coming in. Fun stuff.
- I helped my mom set up her very own Facebook page. Never thought THAT day would come…
- Met up with some MUCH needed catchup time with my girl cousins. Can’t remember the last time we had a GNO, but it was so great to re-bond, have a few drinks, and laugh it up.
For our get together, we decided to each bring something for the dinner so I whipped up this super easy and healthy dish. It was my first time making it and I think it turned out pretty good. I may add some mushrooms, spinach, or broccoli next time for some veggie options, but the possibilities are endless.
INGREDIENTS: (serves 6-8 people)
- (1) 16oz pack of whole grain rotini (you can also use penne pasta or shells)
- (2) chicken breasts
- (2) 24oz jars of spaghetti sauce (there is only 1 in the picture but there should have been 2) opps!
- (1) cup mozzarella cheese, divided
- (3) teaspoons Italian seasoning
- (2) teaspoons salt
- (2) teaspoons pepper
- Red pepper (if you want some spice) – optional
STEP ONE: Boil 2 pots of water – one for the pasta and one for the chicken. I added salt to both pots. In the meantime, preheat your oven to 350 degrees. When the water comes to a boil, place the pasta and chicken in. Cook pasta al dente (around 10-15 minutes) // chicken varies but mine took about 20 minutes. To speed up the process, you can cut chicken into small pieces or stab with a knife.
STEP TWO: Drain pasta. With the chicken, tear into small pieces. You can also cut it if you’d like.
STEP THREE: Spray a casserole dish with olive oil. combine pasta, chicken, and seasonings and mix well.
STEP FOUR: Mix in the sauce and 1/2 cup of cheese. Place in oven for 20 uncovered. When it’s done, take it out and top it off with the rest of the cheese. Let cool and serve. YUM! Great with a salad and garlic bread :) Enjoy lovelies!

Uggh— my little one has 5 teeth coming in right now (I am not kidding), needless it has been a tough several days.
As for the recipe- I think I will give it a shot with rice pasta (we try to eat as little gluten as possible), but I love how easy it looks!

6 miles that is impressive, I am a good walker. In fact I do not drive and walk everywhere but running not so much I always get chest pains and I think I would be hurling after half a mile : O

Congrats on having your little one! I can’t believe she is almost one year already! Oliver just turned one month so the time has already been flying!
