You know what I love about Spring? Strawberry season! This fruit is, hands down, one of my FAVORITE fruits of all time and I love eating, baking, and drinking with it.
Lately, I have been in such a rut when grocery shopping for snacks. Have you read what they are putting in foods now? Between reading labels and articles on Food Babe, it is downright scary! With a little toddler running around now, I am so much more conscientious about what I am eating + what I am feeding her. Lately, she’s been crazy for popsicles so I wanted to make her some healthy ones from scratch and these are SO yummy! Here are the simple ingredients (makes 6 regular popsicles or 12 mini ones):
- 1 pint strawberries, hulled and chopped
- 1 cup Greek yogurt
- 1/4 cup milk
- 1/4 cup honey + 2 tablespoons honey
- 3/4 cup granola (optional)
STEP 1: Rinse strawberries and roughly chop them up. It should make about 3 cups.
STEP 2: In a small saucepan, combine chopped strawberries + 1/4 cup honey over medium heat for about 10 minutes. Stir often – this will help make the strawberries thick and more liquidy. (It should resemble a jam-like consistency.) Set aside to cool at room temperature.
STEP 3: Combine Greek yogurt + milk + 2 tablespoons of honey together in a bowl. It should yield a consistency of regular yogurt (since Greek yogurt is thicker). Add a little more milk, if needed, to get that effect. If you choose to add some granola, I simply added it to the yogurt mix.
STEP 4: Place yogurt + strawberry mix into popsicle molds. Do NOT fill to the brim as this will overflow once you put the stick in. You can do it in layers or mix it all together. For variation purposes, I had more yogurt in the 1st set and more strawberries in the 2nd.
STEP 5: Carefully place stick in each mold making sure to close tightly. Place in freezer for at least 5 hours. When ready to enjoy, simply run the popsicle under warm water for 10-15 seconds to loosen it up. If you have any leftover strawberry jam, you can store it for a few days in the frig.
That’s it! So simple, right? These mini popsicles are the PERFECT size for toddlers to enjoy. Marli LOVED this little dessert and I can’t wait to try it with different fruits/flavors – I am thinking blueberries, watermelon, kiwi, and maybe even throw in some coconut. Yum! Enjoy lovelies!
