I also love packing them as a snack if I’m running around with Marli in the morning. 9 out of 10 times, I somehow find myself in the Starbucks line and am always so tempted to grab one of their pastries along with my coffee. I love my Starbucks, but I just can’t justify eating a slice of their Banana Nut Bread for 410 calories and 21g of fat. Ekkk! I would much rather save those calories for a fat juicy burger ๐
Anyways, this recipe is really good and very easy to make. The trick is to use applesauce in place of the butter/oil and egg whites instead of eggs to make it healthier. Here it is folks!
INGREDIENTS:
- 1 1/2 cups all purpose flour
- 1 cup rolled oats
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 2 egg whites
- 3/4 cup milk
- 1/3 cup unsweetened applesauce
- 1/2 cup raisins (or cranberries)
- 2 large bananas, ripe, mashed (or 3 medium sized ones)
STEP 2: Combine egg whites, milk, and applesauce in a large bowl and mix well.
STEP 3: Add all the dry ingredients into the large bowl and mix well.
STEP 4: Add the raisins/cranberries and bananas. Mix mix mix!
STEP 5: Spoon muffin mix 3/4 full into each tin. Bake for 18-22 minutes.
My hubby likes to spread a little butter on them, but I love them as is – straight out of the oven with my morning coffee ๐ Have a great Monday lovelies!
