Alright, loves. This post is way overdue, but I’m finally sharing my delicious air fryer rotisserie chicken recipe with you today. I can’t even remember the last time I published a recipe post, but with all of us in quarantine-mode, I feel like we’ve all been spending more time in the kitchen revisiting old dishes and learning new ones. I made this dish a few weeks ago and completely shocked myself. I’ve cooked a lot of things in my air fryer, but never an entire bird. Well, folks, it turned out damn delicious – perfectly crispy on the outside and so juicy on the inside. Yum!
Before we get to the recipe, let’s chat about one of my most beloved appliances to date. If you don’t already own an air fryer, it’s definitely worth investing in one. For real. I’ve made anything from veggies to chicken nuggets, burgers, fish, and so much more in it. We have the 5.8 Quart Cosori Air Fryer and I use it at least 1-3 times a week. Now, for the recipe and a few tricks for air frying the most perfect bird your family will devour. The ingredients are super simple and can be adjusted to your liking.
INGREDIENTS
- 4 tbsp butter, softened and divided
- 1 whole chicken, about 3-5 pounds
- Favorite Seasoning of choice – I used Weber Roasted Garlic Seasoning
- Salt & Pepper to taste (optional)
DIRECTIONS
- Thoroughly clean the chicken removing the neck and giblets. Pat dry with a paper towel,
- Place 2 tablespoons of softened butter under the skin around the breast and leg of the chicken. You can also cut thin blocks of butter and disperse it that way. This will keep the chicken moist!
- Sprinkle seasoning and remaining butter over chicken and inside cavity. Make sure to rub it well into the skin. Do NOT discard any leftover seasoning – you will use it later to baste the chicken.
- Preheat air fryer to 350 degrees. When it’s hot and ready, place chicken BREAST side down in the basket and cook for 30 minutes. After 30 minutes is up, flip the chicken and let it cook for another 15-30 minutes (depending on size of your chicken). My chicken was over 4 lbs and it took 60 minutes to cook. The temperature inside the bird should reach 165 degrees.
- When there’s about 5 minutes left on your timer, open the basket and use the leftover seasoning to baste your chicken. This will help keep your chicken juicy and add crispiness to the skin.
- Remove chicken from air fryer and let it rest for 10 minutes before cutting into! Super important as this will allow the juices to redistribute themselves back through the meat.
- Serve with your favorite side dishes. We did roasted veggies and it was a hit.
Is your mouth salivating yet? So good, guys! You can also make this recipe with split chicken breasts. Wahoo! All the instructions are the same except the cooking time. Just decrease the time to 25-30 minutes and flip halfway through. I was able to fit 3 of these huge pieces in my 5.8 Quart air fryer and it was done in just 30 minutes.
