Hey guys! Today I’m sharing a super easy, fast, and healthy meal you can make in 20 minutes. I’ve been making it a point to stick with lean proteins in my diet and fish is an amazing choice. We eat salmon at least once a week because those omega-3 fatty acids, amino acids, and vitamins are soooo good for you! Plus, this fish is SO easy to cook and if you do it right, it will turn out so yummy and moist.
INGREDIENTS:
4 6oz Salmon Fillets (I bought 1 large piece and cut it myself at home)
2 tablespoons Olive Oil
Salt & Pepper to taste
2 teaspoons Paprika
2 teaspoons Parsley (fresh is best, but in this case, I ran out)
1 tablespoon Minced Garlic
**please note the amounts are only an estimate so use as much/little according to your taste buds**
Serves: 4 | Prep Time: 5 min | Cook Time: 15 min
STEP ONE: Turn your oven on – BROILER mode. Mine had an option for HI or LO – I set it on LO. Let it heat up for at least 10 minutes before placing the dish in.
STEP TWO: Grab a baking sheet, line it with foil, and lightly spray the foil or drizzle with olive oil. I also sprinkled some salt and pepper on it too.
STEP THREE: Place fillets (cut-side up) on the baking sheet. Drizzle with olive oil and sprinkle salt, pepper, paprika, parsley, and garlic.
STEP FOUR: Place baking sheet in middle of oven. Broil on LO for 15 minutes or until salmon is opaque throughout. Remove and serve with your favorite side dish.
That’s it! I’ve paired this with quinoa and steamed veggies, on top of a salad, with rice, and in this case, with some orzo pasta mixed with diced zucchini. It’s always a hit in my house and so easy to make. Let me know if you try this simple and healthy dish!
