Hey loves! How was your three-day weekend? I spent a majority of my time with the fam bam and dabbled in a bit of cooking here and there. I don’t know about you, but I think the oven is God’s gift to new mommys. Don’t you think?? I feel like 80% of our meals at baked in the oven nowadays and I LOVE it! It’s quick and easy and such a time AND lifesaver for me! (Not to mention how much healthier our dinners have been lately. Gotta love that.)
I’ve whipped up this great recipe from time to time and we had it last week. YUM! It’s probably one of the MOST simple recipes ever – only a handful of ingredients – that will sure to be a hit with your family and friends. I popped this in the oven as soon as I got home, set the time for 1 hour, went for a quick outdoor workout, and when I got home, it was done. Talk about multitasking! Here are the SUPER simple steps. INGREDIENTS:
- 1 cup honey
- 1 cup dijon mustard
- 1/2 cup Soy Sauce (I used Light Soy Sauce)
- 3 tpsn curry powder
- 8 chicken breasts (I used 8 leg quarters, skin and fat removed)
{Yields 8 Servings}
In a large bowl, mix all the ingredients together. Cover and let the sauce marinade overnight in the frig.
The next day, transfer to a baking dish and bake the chicken at 350 degrees for one hour.
Yup, that’s it! A little too easy and good to be true, but I told you this recipe is a no brainer. We ran out of quinoa and brown rice so I paired it with some fluffy white rice and veggies. Feel free to drizzle the sweet and savory sauce on your rice! Yummy in my tummy.
