When life hands you pineapples, make pineapple bun burgers! This summer, I’ve been getting creative with my meals and this tropical-inspired recipe is probably one of my faves. The wonderful combination of sweet juices from the pineapple mixed with the salty taste of the burger patty is uhhmazing. If you guys haven’t tried this, you’re in for a real treat.

I actually made this burger by complete accident after I ran out of buns and needed something to hold everything together. The girls and I had just came home from a fun, but exhausting run at the park and we were starving! I knew I needed to whip up something fast, tasty, and healthy so I decided to try the pineapple for a low carb option and wowzers. So good!! I love making things the entire family can enjoy, especially when I can throw my own spin on it and this was a hit.
On pool days like today, I usually set up a station so the girls can build their own mini burger. They have the best time “making” their own food and it’s less stress for this mama. I love teaching them about healthy eating and how you can still enjoy your favorite dishes without sacrificing flavor.
To keep the tropic vibes going, I wore this adorable Adidas tropical print bodysuit (which could totally double as a swimsuit) for our pool day. The colors are beyond adorable, but that back detail sold me! I’ve raved about these Edge Lux shoes before so it’s no surprise I’m wearing them yet again. I love sticking to pieces that make me feel comfortable, confident, and stylish and these two do just that!

PINEAPPLE BUN BURGER RECIPE
INGREDIENTS
- 1 lb. 93% lean ground turkey
- 1 tbsp. Worcestershire sauce
- kosher salt
- freshly ground black pepper
- 8 pineapple rings
- 1 large red onion, sliced into rings
- lettuce
- 4 slices tomatoes
- 4 slices pepper jack
- 8 slices cooked turkey bacon
- 4 slices avocado (optional)
- 4 over easy eggs (optional)
DIRECTIONS
- Heat grill to medium-high. In a large bowl, combine lean ground turkey, Worcestershire sauce, salt and pepper. Form into 4 patties.
- Grill patties, pineapple, and red onion until charred, about 3 minutes per side. Top burger patties with pepper jack and cover grill to let melt, 1 minute.
- Top bottom pineapple buns with burger patties, bacon, lettuce, tomatoes, and grilled onions, then top with pineapple bun.
